I've shared some of their old photos before. There are many variations of fish head depending on your personal preference. Whether you want it steamed or deep-fried, slightly spicy or something simple like ginger, or even garlic. The best thing about their fish heads? They are all steamed to perfection where the skin of the fish is soft and wobbly like jelly. Deep-fried version is also just perfect, not overly crispy or under cooked either. The layer of crispiness outside, and soft inside. Some parts of the fish works like a cookie!
